Castillo has a reputation for being the safe choice — bred for rust resistance, planted all over Colombia. Grown well, at elevation, it's better than that.

Cool nights up here slow the cherries down, and you can taste it. There's a lot of sugar in this coffee.

Medium roast. Dark enough for the chocolate, light enough to keep the fruit. Black cherry, plum, chocolate underneath. The chocolate gets heavier as the cup cools.

Full body, soft acidity, long finish. Pulls a good straight shot and doesn't disappear in milk.
