Same trees, same hillside, same washed Caturra. The only thing that changed is what happened to the cherries while they fermented — and one of them came out tasting like a slice of watermelon, another like it was poured out of a can of lychees in syrup.
Line them up. Watermelon first, it's the lightest. Peach second. Lychee last, because it's the loudest and it'll flatten whatever comes after it.
Then try to explain to yourself what fermentation actually is.
60g each — four cups a bag, enough to make up your mind.
Pour over: 15g, 250g water, 91°C, 2:30. Same for all three, that's the whole point.
