Java didn't come from Java. The name followed the plant through Indonesia. But genetic testing traced it back to Ethiopia — a landrace, not a Typica descendant. You don't see much of it in Colombia. Benedicto and Helena grow it.

Dried whole in the cherry, skin on. That's where the fruit comes from.

Roasted light. A natural Java doesn't need help. Hawthorn, berries, a little rum underneath. Soft acidity, light-to-medium body, sweet through the whole cup. There's ferment in here — not much, but it's there. If naturals aren't your thing, you'll taste it.
